Rainbow Salad

Rainbow Salad

A fav in my house!!
The sweet maple syrup pairs nicely with the earthy beets

Ingredients

  • 1 apple
  • 1 carrot
  • 1 beet
  • 1/2 Tbsp. pure maple syrup
  • 1/2 Tbsp. olive oil
  • 1/2 Tbsp. vinegar (balsamic or apple cider)

Directions

  1. Shred the carrot
  2. Slice the apple
  3. Peel and dice or slice the beet (be careful as the beet juice can stain)
  4. Place in bowl. Whisk syrup, oil and vinegar and poor over salad and mix.
  5. Taste and add more dressing if needed.
