Rainbow Salad
A fav in my house!!
The sweet maple syrup pairs nicely with the earthy beets
Ingredients
- 1 apple
- 1 carrot
- 1 beet
- 1/2 Tbsp. pure maple syrup
- 1/2 Tbsp. olive oil
- 1/2 Tbsp. vinegar (balsamic or apple cider)
Directions
- Shred the carrot
- Slice the apple
- Peel and dice or slice the beet (be careful as the beet juice can stain)
- Place in bowl. Whisk syrup, oil and vinegar and poor over salad and mix.
- Taste and add more dressing if needed.
