Roasted Veggie Salsa

My hubby is one of the best "wing-it" cooks I know. Here is a delicious smoky salsa he makes on a regular basis. This one is for Franko:)

Preheat the oven to 425F

1. Get some veggies


2. Cut them up and place on a baking sheet


3. Roast in the oven for an hour or so


4. Let cool and then put in the food processor with salt, pepper and a squirt of lime juice...or any other flavours you are craving. Pulse until it becomes a chunky consistency.



5. Enjoy it with your favourite meal! It's shown below atop corn chips, quinoa, black beans and veggies. We also included a yogurt sauce and cilantro.
