I posted this recipe already but here it is with pictures. I added sliced radishes as I have a big bag to use up. We paired it with veggie lettuce wraps. It was delicious!!
Rainbow Salad
Ingredients
- 1 apple
- 2 carrots
- 1 beet
- 2 radishes
- 1 Tbsp. pure maple syrup
- 1 Tbsp. olive oil
- 1 Tbsp. vinegar (balsamic or apple cider)
- Shred the carrot
- Slice the apple
- Dice or slice the beet (be careful as the beet juice can stain)
- Slice the radish thinly
- Place in bowl and mix. Whisk syrup, oil and vinegar and poor over salad and mix.
- Taste and add more dressing if needed.
