Rainbow Salad for Dinner Tonight!


I posted this recipe already but here it is with pictures. I added sliced radishes as I have a big bag to use up. We paired it with veggie lettuce wraps. It was delicious!!

Rainbow Salad




Ingredients

  • 1 apple
  • 2 carrots
  • 1 beet
  • 2 radishes
  • 1 Tbsp. pure maple syrup
  • 1 Tbsp. olive oil
  • 1 Tbsp. vinegar (balsamic or apple cider)





Directions

  1. Shred the carrot
  2. Slice the apple
  3. Dice or slice the beet (be careful as the beet juice can stain)
  4. Slice the radish thinly
  5. Place in bowl and mix. Whisk syrup, oil and vinegar and poor over salad and mix.
  6. Taste and add more dressing if needed.
Salad with dressing mixed in. Can be made ahead and refrigerated.
