For the Meat Eaters

I eat a vegetarian diet, but I know it's not for everyone, so here's an interesting cooking tip for my meat-eating followers that I came across in a local running magazine called The Pace Setter.

"Mushrooms have a meaty, savory flavor that allow them to be easily substituted for meat. Taste-testers equally enjoyed beef tacos made with 100% beef, 50% beef and 50% mushrooms, or 20% beef and 80% mushrooms. Adding more mushrooms to your beef dishes (stew, spaghetti sauce, meatballs) lowers caloric and saturated fat intake and is less straining on the environment. For every 2lbs (1kg) less beef consumed there are 60lbs (27kg) less greenhouse gases emitted."
